Location: Santa Vittoria d'Alba (Cuneo).
Position: altitude of 340 m a.s.l., south-facing exposure.
Soil: clayey-limestone.
Grape variety: 100% Moscato Bianco, hand-harvested with cluster selection.
Pruning: Guyot.
Density: 4,400 vines per hectare.
Winemaking: soft pressing, cooling, and filtration to stop fermentation. Controlled fermentation follows until the desired alcohol level is reached. Cooling is then applied to halt fermentation, preserving over 50% of the natural sugars from the grapes, followed by bottling.
Color: straw yellow with light golden reflections.
Aroma: aromatic, characteristic, intense, and fragrant.
Taste: fresh, sweet, aromatic with hints of honey and fruit.
Serve at a temperature of 8°C.
Fruit tarts or jams, canned fruit, spoon desserts, cakes with creams, yogurt, almonds, and hazelnuts. It is also worth trying with Roccaverano robiola cheese or oysters.
